July has been an amazing month, this summer is has been treating me well so far and with August being my birthday month there's only more fun times from here! I'm currently in Thailand spending some quality time with the family so expect some exciting blog posts of my adventures soon and a full report of my time in London. Banana, Maple, Walnut Muffins (Vegan & Gluten Free)

Banana, Maple, Walnut Muffins (Vegan & Gluten Free)

Before I left for Thailand I had a few things left in my cupboard that I wanted to use up, namely a bag of walnuts and some maple syrup, so I decided to bake some muffins for the family to enjoy whilst I'm away. I love experimenting with flavour combinations and maple and banana is a most deliciously heavenly match and as I wanted to cater to everyone's dietary needs I decided to keep the recipe simple, vegan and gluten-free.

Banana, Maple, Walnut Muffins (Vegan & Gluten Free)

Ingredients
  • 3 mashed bananas
  • 1 cup self-raising gluten free flour
  • ½ cup maple syrup
  • ½ brown sugar
  • 4 tbsp oil
  • ½ cup coconut flour
  • 1 cup chopped walnuts
  • 1 tsp baking powder

♥ Preheat an oven to 180°c and line a muffin tin with 12 - 15 cases.

♥ Mix together the banana, maple syrup, sugar oil and baking powder

♥ Add the coconut and gluten free flour until thoroughly mixed then fold in the walnuts.

♥ Divide the batter into the muffin cases.

♥ Bake in the oven for 20 minutes until golden brown.

♥ Once baked remove from the oven and place on a wire rack to cool before serving.

Eat and enjoy!

Building a Time Machine with LEGO!


Lego has been a lifelong love of mine, it was my favourite toy growing up and now with its awesome nerdy themed sets like The Lord of the Rings, The Simpsons, DC, Marvel and Ghostbusters it has once again become an obsession. Lego has proven there really is no time limit or age restriction on the things that you love and most importantly EVERYTHING IS AWESOME!

It's ridiculous how long this has been sitting in my closet, I think I got it sometime last September and I actually have sets waiting to be built from even longer so I thought it was about damn time I opened one of them because Lego is no fun if it just stays in the box, it's made to be built.



Back in 2011 I actually met the awesome Christopher Lloyd and got a photo taken with him in a REAL Delorean, definitely one of the best things to ever happen to me at a Comic Con. Back to the Future was one of my favourite films growing up and Christopher Lloyd is a legend I'm such a fan of everything he does so when I first saw that Lego came out with this Back to the Future set I had to have it.

The kit even included extras that you could add to it to make it look like all 3 versions of the Delorean which I thought was pretty cool. It took me about 2 hours to build and I actually filmed the process but condensed it into a more watchable 3 minutes and stay tuned till the end of the vid to see some of my mishaps, but don't worry despite the freak outs it was a pretty fun build and I can't wait to do more.

LONDON BABY!!


It's that time of year again where I venture down south for London Film & Comic Con, I'm especially excited this year as STAN LEE is a guest, I'm so excited to see the legend in person, I've always wanted to meet him and I'm dragging The Dad along with me as he's a big Marvel fan to. I'll also be spending a couple extra days down there as I'll be going to see one of the Monty Python live shows and a baby mammoth! I hardly ever leave the Earls Court area when I'm down there for Comic Con so it will be nice to see a little more of London town.

#OOTD: A Dance with Dragons

I have a confession to make, I haven't read A Dance with Dragons! After devouring the first four books in the A Song of Ice and Fire series I started getting some pretty vivid dreams about White Walkers and dwarfs trying to kill me so I needed a time out from the world Westeros and therefore never got round to reading A Dance with Dragons but after a looong break I fully intend on catching up this Summer.

Direwolves are my obsession and almost all of my Game of Thrones T-shirts have Ghost on them so when I saw this design for $10 on Once Upon a Tee I had to grab it but silly me ordered it a size too big so I got out my scissors and decided to turn it into a baggy crop top et voilĂ  perfect for the summer!

My dragon necklace is based on an actual Viking design they found in Iceland which is where I also bought  my volcanic rock bracelet, they're definitely the perfect addition to my "Thrones Wardrobe" I mean Iceland is the original Land of Ice and Fire!

I can't believe Game of Thrones is done for another year but I suppose that gives me plenty of time to catch up on my reading, I've already downloaded the A Dance with Dragons audiobook to listen to on my trip to Thailand so that should hopefully tide me over for a month or two...
